Our answer: a goat's lactation cycle
A goat's milk is not available all year round. Depending on the month or the period, the quantity produced may be greater or lesser. The lactation period is between March and December, with a peak in production 1 month after calving, more or less between March and April. During the winter, farmers dry their cows by stopping milking. This helps to keep the udder healthy and contributes to the animal's well-being.
Measures taken by farmers
As well as drying off, they carefully monitor the amount of feed provided, ensuring that their goats receive the nutrients they need to maintain their overall health. This rest period also helps to prepare the goats for the next lactation season.
Consequences for cheese availability
The goats' winter dry period has a direct impact on the availability of some of our goat cheeses, especially the fresher ones. During the winter months, you may notice an absence of certain cheese products, and this is part of what makes these products so rich and rare.
